It being Friday, I was contemplating tonight's pizza dinner, and remembered that, back before the snow, power outage, and Thanksgiving, I promised you all some pizza sauce ideas. I have included suggestions for toppings that we like to use for each. Enjoy!
Pizza Sauce (standard, tomato base)
2 cans tomato paste
3/4 c water (or you can use 1 15 oz can tomato sauce to replace paste and water)
1 Tbsp dried oregano, crushed in your hands as you add it
1 - 1 1/2 tsp garlic powder (or 2 cloves put through a press)
2 tsp sugar
1/2 to 1 tsp pepper
Adjust spices to taste, since these are approximations. Stir together and spread on pizza crusts with back of large spoon. When spread and topped, the taste will be less strong, so we err on the side of just a little too spicy rather than too bland.
Add toppings, any combination of the following:
Pepperoni, sausage (precooked), ham, onions, olives, pineapple, spinach leaves, mushrooms, or whatever pizza toppings you like….Followed by a layer of shredded Mozzarella cheese.
White Sauce for Chicken or Vegetarian Garlic Pizza
1 cup mayonnaise
1 Tbsp red wine vinegar (subbing another type is OK)
1/2 Tbsp Worcestershire Sauce
1 tsp garlic, or more to taste
1/2 Tbsp dried basil, crushed with hands as added
1/2 - 1 tsp pepper, also to taste
Dash cayenne pepper (optional)
1/2 c or more shredded Parmesan Cheese
Mix, spread on pizza, and top with bite-sized, cooked pieces of chicken breast (seasoned with pepper and garlic), and/or any of the following: diced onion or green onion, sliced black olives, diced tomato (seeded), and spinach leaves. Top with a light layer of Mozz Cheese and sprinkle on more Parmesan.
Pesto Pizza
Use commercially or home made Basil Pesto as the sauce….a thin layer. Great topped with only Mozzarella cheese, or also with any combo of spinach, onion, mushrooms, cooked chicken, and goat or Feta cheese (crumbled). --The one pictured above has 1/2 Mozzarella and 1/2 Feta, to meet specific requests.
