DIY Toaster-Tarts

Pop-Tarts Toaster Pastries Variety Pack, 48-Count PastriesPrince Inventive loves Pop Tarts.  So much so that he puts them on his birthday wish list, and his grandparents usually give him a big box...which, of course, he's unlikely to share.  So with the confections in the house, taunting her, Princess Eager decided there must be a way to make her own.

She did an online search and found that others have gone before her in making their own homemade toaster pastries, so she printed a dough recipe found on SmittenKitchen.com and set to work.  It's basically a 2-crust pie crust recipe with an egg added for better handling...So the crust is not too delicate for eating by hand.

Not satisfied with the filling recipe, the princess concocted her own.  She mixed together 3 cups of blueberries, 4 cups of raspberries, 2 cups of water, and 1 1/2 cups sugar.  She heated it, stirring, until boiling.  She mashed and strained the hot mixture, then returned it to the pan, and thickened it with corn starch.   




After cooling, she spread it on rectangles of dough, rolled about 1/8" thick, keeping the filling about a half inch in from all edges.  Another rectangle of dough went over the filling and she pressed the edges together, then used fork tines to seal the edges further, and pricked holes in the top of the pastries.




These got baked at 350 degrees for 25 to 30 minutes.  She iced some of them with a powdered sugar, vanilla, and water glaze...I prefer mine without the unnecessary sugar load.





These are delicious.  The crust is flaky, without being crumbly.  The filling was very fruity, and not overly sweet.  I am not a fan of Pop Tarts, but I could eat these all day.
