Carbo-Loading with Clam Spaghetti

Last week was end of junior high track season, and Princess Artiste and Prince Go-for-It both qualified for the district championship meet.

To 'carbo load' the night before, they both had the same request...                                                                                                                                   
 Clam Spaghetti

Over medium low heat add
1/2 cup flour
to
1/2 cup melted butter, Canola or olive oil, or combination
Whisk until smooth, and let cook a minute or so.                                                                                                                                   
Drain
12 ounces minced clams, canned or fresh
reserving both nectar and clams.  Set aside clams for later.                                                                                                                                                                                                                
Combine clam nectar with enough
milk
to make 4 cups of liquid, and pour slowly into flour/butter roux, stirring constantly.  
Heat at medium-high heat, stirring often, until thickened and bubbling.                                                                                                                                                  
Add
reserved clams
minced parsley (2 Tbsp fresh, or 1 Tbsp dried)
2 - 4 cloves garlic, put through a garlic press, or 1/2 - 2 teaspoons garlic powder
dash cayenne pepper (optional)
1/2 cup grated Parmesan cheese
black pepper, to taste 
Stir and heat through.                                                                                                                                                                                                        
Serve over your choice of cooked pasta noodles, or cooked pasta layered with fresh, steamed spinach.  Sprinkle with additional Parmesan cheese, if desired.                                                                                                                                            
Not interested in Carbo-loading for myself, I added cauliflower to mine.
I would've used broccoli or spinach if we had it, for the green-veggie
nutrients and more interesting color
