Not the most appealing sounding name for a meal, but Prince Stoic gave this label to one of his top 5 meals, typically our every-Thursday dinner.
This meal has 3 main elements: Chicken breast in enchilada sauce, Mexican rice (or similarly seasoned quinoa), and our homemade (un-fried) refried beans.
It goes on the plate as a serving of rice, a serving of beans and the chicken and sauce go over both. We sprinkle shredded lettuce and cheese over all, top with a good dollop of sour cream, plain yogurt, or cottage cheese...Then since everyone likes a bit of everything per bite, most stir it all together. I won't show you a photo of that, because trust me when I say that its appearance probably suits its name! But it's tasty and warming, and one of our family's favorites.

Sounds great! Originally coming from Rochester, NY - we eat garbage plates, so Mexican Chicken Slop doesn't sound unappealing at all. I love that your son named it, and it stuck. Thanks for sharing.
ReplyDeleteWow. I am going to have to ask my sister-in-law about that one, as she grew up in Rochester, too. I don't know if it's reading it in the morning or what, but it sounds pretty awful! The mayo'd macaroni sounds like just too much in the mix... I'm sure it's one of those things you can't really appreciate without trying it first. Interesting! Thanks for sharing.
ReplyDeleteI know it sounds awful(that's why it's called a garbage plate,) but it's a Rochester thing. Kind of like white hot dogs - also a Rochester thing. Your SIL should be able to describe it better.
ReplyDeleteWhen I was pregnant with Snuggle Bunny, I had the worst cravings for a white hot garbage plate. I had been complaining about these cravings for awhile. One of my friends picked one up wrapped it in aluminum foil, then plastic wrap then masking tape and double bagged it(they'll smell up your car,) placed it in his trunk and drove the 2 1/2 hour drive down to Binghamton in 2 hours. It was still warm and I wolfed it down declaring him a god.
What a good friend!! But now you have to explain 'white hot.'
ReplyDeleteWith such an awful name, it has to be good! It is pretty before mixing. We have some one dish meals that look pretty disgusting, too. No pictures of those dishes. ha
ReplyDeleteA white hot is like a red hot dog, except it's white and it tastes different. The Rochester based company, Zwiegles, makes pop open white hot dogs in a natural casing that is very much an upstate NY thing. In fact even though Binghamton is usually considered upstate it's too far downstate to have much of a white hot following.
