I say we are 'terminal DIYers,' and we try it all: Home/Kitchen Design & Building, Cooking, Baking, Sewing, Gardening, Woodworking, Homeschooling... But the seasons are changing, and in this one I plan to rediscover the artist in myself. I'm stepping out with some ideas and seeing where they take me...and us...at Our Home for Ten (RHome410)!

The weather was just about perfect. Definitely not hot, and, very importantly, not 'showery,' as forecasted.

Way back when my husband and I were married (35 years ago) couples often froze the top layer of their wedding cake and ate it on their first anniversary. We all know now that you aren't supposed to consume foods that have been frozen for that long, but hey, it didn't kill us. In fact, as I recall, it was still pretty tasty!

We also saved the top of our cake, 26 yrs ago, and ate it on our first anniversary. It was also very good. I didn't know there was anything bad about doing that, as we'd planned to do that with this cake. Do you think it's a dangerous idea to freeze it today with the Bavarian cream filling put in yesterday?

I think if the cake hasn't gotten hot the cream should be fine. Sugar is a pretty good preservative. Modern practices mean there are far fewer bad organisms in the food to breed. Still dangerous if they do, but low probability. The only reason for not freezing cream cake for a year is if it's in a self defrost that warms up. That could potentially let the bacteria develop--still unlikely. Otherwise the only issue is if the texture goes off.
All your princesses look so nice in their dresses with the lace trim. Their mother looks composed, elegant and happy. And the bride and groom are just radiant! What a lovely occasion!

Freezing the top layer of the wedding cake is a newlywed ritual most of us. Ours was good a year later.
